Good morning, my friends! It’s a beautiful Minnesota morning indeed: cool, sunny, and with a robust breeze. It’s the kind of morning I want to grab my bike for an epic day trip or hike out to an overlook with my Bible and a steaming thermos of coffee.
In reality, though, my day started out by sleeping in after getting home from work around midnight (yay evening shift!). After getting up, I meandered down to the kitchen and started pulling things out of the fridge for breakfast. Because I am moving in with my family in a week, I am trying to use up the ingredients in my fridge and pantry. So I pulled out dates, chia seeds, and shredded coconut. Adding a few ingredients to the mix, I blended, mixed, kneaded, and finally rolled into balls this little recipe of goodness.
I’m calling this recipe Chocolate Lovelies because #1 they’re chocolate and #2 they taste lovely. ‘Nuff said. I’ve seen dozens of recipes like this before and while I’ve made versions of them, I’ve never made a recipe that I like quite as much as this one, so I’m writing it down for both my sake and yours so they can be recreated in the future. So without further ado, here it is:
Chocolate Coconut Date Balls
Ingredients: 15 dates, pits removed ⅓ cup coconut oil, melted 1 cup rolled oats ¼ cup cocoa powder ¼ cup unsweetened shredded coconut 2 T chia seeds 2 T dark chocolate chips ½ sea salt
Directions: 1. In a blender, combine dates and melted coconut oil until incorporated. You can use a food processor if you have one. I used my ninja bullet. 2. Transfer to mixing bowl and add in oats, cocoa powder, coconut, chia seeds, chocolate chips and salt. Mix or knead with your hands until a nice, dense consistency is achieved. 3. Roll into 1” balls. Store in the refrigerator.
Also know that all of these values are approximate. Feel free to add/swap/sub anything your heart desires. Just follow the base of dates/coconut oil and add in dry ingredients until the desired consistency is achieved. This recipe makes about a dozen chocolate lovelies.
