I am so excited to share this easy breakfast with you guys! A while back, I wanted to start including more healthy fats like avocados into my diet, but I really wasn’t a fan of eating this odd fat-laden fruit just plain with salt and pepper. So I made avocado fruit smoothies. I made chocolate avocado pudding. I tried about every sweet avocado recipe I could think of, but finally decided it was time to find savory avocado recipes, too. Hence one of my favorite breakfasts was born.
I'm going to share with you exactly how I make mine, but there is much room for experimenting. Try using as a base other types of bagels or English muffins, add some bacon or ham, or use a different kind of cheese. The idea is to create a satisfying, delicious, and simple breakfast you can make quickly and feel good about eating.
Egg & Avocado Breakfast Melt
Ingredients: 1/2 gluten-free bagel 2 eggs 1/2 avocado 1 slice colby jack cheese coconut oil, salt, and pepper
Ingredients: 1. Pop your bagel in toaster and while that’s toasting, cook 2 eggs over-medium in 1 teaspoon coconut oil. Add salt and pepper to taste. 2. On a cookie sheet or baking pan, layer slices of avocado on toasted bagel, top with eggs, and place a slice of cheese on top. 3. Placed under the broiler for approx. 2 min or until the cheese is melted and bubbling. 4. Enjoy with a glass a fruit smoothie or berry-yogurt parfait for a complete breakfast.
